Guess what I have for you. The best pumpkin chocolate chip muffins recipe ever! We made them yesterday, and they are almost all gone. Moist and mouth watering good is what they are. You have to try them. {We always double the recipe too.}
Pumpkin Chocolate Chip Muffins Ingredients:
1 2/3 c. all-purpose flour
1 c. sugar
1 T. pumpkin pie spice
1 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. salt
2 lg. eggs
1 c. plain pumpkin
1/2 c. butter, melted
1 c. chocolate chips
Pumpkin Chocolate Chip Muffins Instructions:
Heat oven to 350 degrees. Grease muffin cups, or use foil or paper baking cups. Thoroughly mix flour, sugar, pumpkin pie spice, baking soda, baking powder and salt in a large bowl. Break eggs into another bowl. Add pumpkin and butter, and whisk until well blended. Stir in chocolate chips. Pour over dry ingredients and fold in with a rubber spatula just until dry ingredients are moistened. Pour into muffin cups. Bake for 20 to 25 minutes.
They are wonderful with your morning coffee or lunch, and they are the perfect afternoon snack. Add cream cheese frosting to your muffins for even more goodness {as seen here on Halloween Party Ideas.}
